The Christmas season is full of family traditions. I love how people also seem more cheerful and friendly this time of year. Here in Minnesota, having a white Christmas also adds to the magic of the season. The Christmas Eve candlelight service at church has also been quite special to us. Ingredients

  • 2 Sticks Salted Butter At Room Temperature (may use unsalted if you’d prefer)
  • 1 Cup Granulated Sugar
  • ½ Teaspoon Almond Emulsion
  • 1 Teaspoon Vanilla Extract
  • 1 Large Egg
  • 2 Teaspoons Baking Powder
  • ½ Teaspoon Sea Salt
  • 3 Cups All Purpose Flour

PRO TIP: If your butter is cold, pour boiling water into a large cup. Leave sit for 30 seconds. Dump the water out of the cup and then place hot cup over the butter stick for 3-4 minutes. It will soften your butter!

Instructions

  1. Preheat oven to 350 degrees.
  2. NOTE: I use my stand mixer for ease. But you could manage by hand if needed. In a large mixing bowl: cream butter and sugar for at least 3 minutes until it’s smooth.
  3. Beat in the almond emulsion, vanilla extract, and egg. Set aside until the next step is completed.
  4. In a separate bowl, combine the baking powder, salt, and flour.
  5. Slowly add the dry ingredient mixture, a little at a time, to the first bowl. Be sure to keep beating continuously. (Use all the dry mix!)
  6. Once the dough becomes too stiff for the mixer, turn out onto your floured surface and finish kneading by hand.
  7. Divide the dough in half. (Do NOT refrigerate!)
  8. Roll the first half out on a floured surface to about ¼ inch thick and cut with desired shaped cookie cutters. (Be careful you don’t roll too thin or your cookies will break easily when you try to frost. If you do, just re-roll the dough again.)
  9. Place cookies on an un-greased cookie sheet at least 2 inches apart.
  10. Bake for 8-10 minutes or till the edges are just barely starting to turn brown.
  11. Remove from oven and let cool on the pan for 5 minutes.
  12. Transfer cookies to a cooling rack to finish cooling.
  13. Once completely cooled, frost as desired with your favorite frosting recipe. Of course, you can make them Christmas Sugar Cookies with sprinkles by topping with your favorite perils and decorations!
